Madura Earl Grey & Orange Slice

This moist and flavourful cake captures the aromatic allure of Madura's bergamot-infused tea and the vibrant tang of fresh oranges in every bite. Perfectly balancing the richness of almond meal and the subtle sweetness of Earl Grey, this slice is a tantalising treat for tea and cake enthusiasts alike. An exquisite fusion of flavours, crafted to elevate your dessert experience to new heights!

Ingredients:

  • 2 Madura Earl Grey tea bags
  • 1 cup boiling water
  • 2 large oranges
  • 1 cup self-raising flour
  • 1 cup almond meal
  • 1 cup caster sugar
  • 3 eggs
  • 1/2 cup vegetable oil

Instructions:

  1. Preheat your oven to 180°C (350°F). Grease and line a rectangular baking pan.
  2. Steep the Earl Grey tea bags in the boiling water for 5-7 minutes. Remove the tea bags and allow the tea to cool to room temperature.
  3. Finely grate the zest of both oranges and set aside. Squeeze the juice from one orange and set aside.
  4. In a mixing bowl, combine the self-raising flour, almond meal, and caster sugar. Mix well.
  5. In a separate bowl, whisk together the eggs, vegetable oil, cooled Earl Grey tea, orange juice, and orange zest.
  6. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  7. Pour the batter into the prepared baking pan and bake for 30-35 minutes or until a skewer inserted into the centre comes out clean.
  8. Allow the slice to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Optional: Dust the top of the slice with icing sugar before slicing it into squares or bars.
