Vegetable and Chicken Turmeric Soup Recipe
1 tbsp cold-pressed olive oil (or oil of your choice)
1/2 small onion finely diced
1/2 leek finely sliced
2 large carrots peeled and chopped
1 large parsnip peeled and chopped
½ cup of sweet potato chopped
1/2 a head of broccoli chopped into small florets
1 400 gram can cannellini beans rinsed
1 zucchini thinly sliced
3 stalks celery chopped
3 cloves garlic minced
3 chicken thighs – cut into thin strips
2 tsp fresh parsley
2 fresh bay leaves
1 tbsp ground turmeric
1/2 tsp ground ginger
1/2 tsp sea salt to taste
4 cups of chicken bone broth
1 400 gram can full-fat coconut milk
1 small head kale chopped – core removed (Tuscan is a delicious variety)
Instructions
Heat the oil in a large stockpot over medium heat. Add the onion and leek and sauté, occasionally stirring, until translucent. Add spices and herbs and sauté for a further 2 mins before adding the sweet potato, carrots, parsnips, celery, and garlic. Continue sautéing, occasionally stirring for approx 5 minutes. Add the chicken and cook through before pouring in the bone broth, beans and coconut milk. Cover and gently simmer for at least 20 mins - add remaining green vegetables and simmer for at least a further 10 mins.
Serve and enjoy!
