You may or may not have noticed, but we have been a little obsessed with Earl Grey this month – we just believe at times the humble Earl Grey is a little overlooked for some of the on trend blends… but it truly is such a delightful blend and so incredibly versatile when it comes to creating delicious treats and today's focus treat: ICE-CREAM!
Making ice cream at home does sound hard – well so we thought so too. But good news it is possible and it’s delicious.
This recipe does take a little time to make, but we assure you it is time well spent and it truly is mostly waiting for the freezing process to take place. So put the kettle and enjoy creating a delicious treat that may leave you just wanting more.
In a saucepan over medium heat, heat cream until just bubbling - be carefully to watch and stir with a wooden spoon. Remove from heat and stir in tea leaves; cover and let sit for 30 minutes. Strain through a mesh sieve into a bowl, pushing the liquid out of tea leaves. Cover the bowl and refrigerate cream until fully chilled.
Place the bowl of a stand mixer and the whisk attachment in the fridge to chill as well - super important to do this.
When you're ready, combine the cream, sweetened condensed milk, vanilla, and honey in the chilled bowl and whip until soft peaks form - about 5 minutes. Transfer to a freezer-safe container and freeze at least 6 hours before serving.
