A Mug Is Not Always Just For Tea

By just looking at a quick and easy home-made option, you will avoid the 'nasties' that often accompany store bought goodies. Remember the less food is processed, the better it is for you! A Modest Chocolate Treat

Ingredients

1/4 cup all-purpose flour (we love spelt) 2 tablespoon unsweetened cocoa powder or Cacao if preferred 1/4 teaspoon baking powder 2 tablespoon granulated sugar (you can add 1 tbsp. more if you like it a bit sweeter or try coconut sugar – YUM!) 1/8 teaspoon salt 1/4 cup + 1 tbsp. milk (of your choice) 2 tablespoon olive oil 1 tablespoon of mini chocolate chips (we love dark)

Instructions

In a medium bowl, whisk together dry ingredients, gradually add in the milk and oil and mix until all ingredients are combined and there are no clumps. Pour batter into a microwave-safe mug – remembering you will need enough head space for the cake to rise without pouring over (too much). Add chocolate chips in the middle of the batter no need to push or mix it down and sink it in the batter. It does that on its own when it cooks! Place a paper towel into the microwave and set the mug on top (this is to catch any batter if your mug cake overflows). Microwave mug cake for 70 seconds on high (Please note that ALL microwaves are different therefore can yield different results and can overcook this mug cake if you are not careful).
